Picnics are a great way to spend some quality time outdoors with family and friends and have a fun, relaxing time. Along with picnics, comes great food as well. The warm weather in picnics also makes it easy for foodborne bacteria to multiply rapidly.

Cleanliness first

Always wash your hands with warm water and soap before and after preparing food. Also make sure you are working with clean surfaces for preparing food. Carry hand sanitizer or disposable wipes to the picnic to be able to sanitize hands before serving and eating food.
Separate raw and cooked foods

Prevent cross-contamination by using different cutting boards and knives for raw meats and ready-to-eat foods. Make sure you take plenty of plates and utensils to your picnic to be able to handle raw and cooked foods separately. Pack uncooked meats in tightly sealed containers in the bottom of the cooler to avoid the juices from dripping onto other foods and spreading bacteria.

Cooking food thoroughly

Always marinate raw meats in the refrigerator to keep them out of the “danger zone” which is between 40 and 140 degrees Fahrenheit. Thaw frozen meats in the refrigerator or in sealed bags in cold water. Frozen meats can also be thawed in the microwave but will need to be cooked immediately.  Meats should be cooked thoroughly to a safe internal temperature and a food thermometer should always be used to verify the meat’s temperature.

Keep cold foods cold

Cold foods should be kept at a temperature of 40 degrees Fahrenheit or below. Never let cold foods remain in the danger zone for more than 2 hours. Find a nice, cool shade to have your picnic and fill your cooler with plenty of ice. Refill it as it melts and be sure the ice is in sealed bags so that your food will remain dry.
